This vegan vanilla ice cream has a yummy coconut flavour to it that I think really elevates it! It’s the perfect ice cream to pair with those Summer pies and cobblers. We enjoyed it with a homemade strawberry rhubarb cobbler on Fourth of July- so good!

I use this ice cream maker and it’s worth every penny! I don’t use it all the time but when I do, I’m so glad I have it! Making vegan ice cream is so much fun and let’s be honest, costs a lot less than what you see in stores.

This vegan vanilla coconut ice cream is perfect for those Summer pies and cobblers! It also makes for a delicious milkshake or float!

Instructions
  1. Add all ingredients to a blender and blend until smooth.
  2. Pour the mixture into your frozen ice cream container and churn until thick and creamy.
  3. Serve as is or freeze for 1-2 hours until you can scoop it out!
