It has been a while since I shared a recipe here! Beckett and I love to bake together and cookies are always a favourite. Oddly, he really prefers the dough over the actual cookie… but hey, more cookies for me!  This particular recipe is great because it’s packed with more nutrients (and you can easily make it gluten free!). It’s a pretty forgiving recipe… which is important when you’re cooking with a kid because your measuring will never be exact! haha I really like adding mini chocolate chips to this for just a hint of dark chocolate- just enough to appease my addiction, you know.

These cookies do have some added sugar but it is optional. Coconut sugar works great as does brown sugar.  Feel free to omit it if you want more of a healthier breakfast cookie. You can always add more applesauce to sweeten or a little maple syrup.  Just make sure to add more oats if the dough starts to feel too wet!

Vegan Trail Mix Cookies
These cookies are easy to throw together and make for a great snack! They aren't too high in sugar and are packed full of fiber and protein.

  1. Preheat oven to 350F.
  2. Combine all ingredients and mix together thoroughly. The dough should be sticky! If it's too dry, add more applesauce, a little maple syrup or a little non dairy milk and mix again. If it's too wet, add more oats. The chia seeds will absorb some liquid so you can also let the mixture sit for 15min and see if it dries up a bit.
  3. Scoop out golf ball size amounts of dough and squeeze between your hands to form a ball. They should take a little work to form into a ball but should feel firm and sticky.
  4. Press each ball down, gently, on a cookie sheet. The size and thickness is up to you but thicker, larger cookies will take longer to cook.
  5. Bake for 15min until the bottoms are golden brown.
  6. Let the cookies cool for 5min before moving or else they will be very crumbly! Once they cool they will hold their shape very well.
  7. Store in the fridge for a firmer cookie.
