Ah, so excited to share this recipe with you guys!! It’s seriously a new favourite of mine (and my husband’s and my son’s!).

Fist of all, I love to bake and cookies are for sure a favourite! I grew up baking with my mom and sisters so there’s something SO comforting about it to me!  Of course, as a health-conscious person I can’t be eating sugary cookies all day every day but a treat now and then? Absolutely! I believe the best “diet” always leaves room for treats.

 

What I love about this particular chocolate chip cookie recipe is all of the nutrients that are snuck in! They TASTE like more traditional chocolate chip cookies but surprise, they are vegan and gluten free!  They are higher in fiber, protein and iron thank to the chickpea flour and lower in sugar thanks to the molasses, maple syrup and sugar free chocolate chips.

Don’t let the ingredients scare you, give these a try! They are wonderfully chewy inside with a slightly crunchy outside just the way I like my chocolate chip cookies!  Are you a chewy crunchy cookie fan or a soft pillowy cookie fan??

Healthier Chocolate Chip Cookies
This cookies use a special ingredient to give them a boost of protein, fiber and iron... chickpea flour!! They are SO delicious, no one will ever guess you've snuck some nutrients in there.

Instructions
  1. Stir together the flax meal and water and let sit for 3min until thickened.
  2. Add the maple syrup, molasses, sugar and oil to the bowl and stir to combine.
  3. Now add the remaining ingredients and stir until fully combined.
  4. Roll the dough into 12 balls and place them on a greased cookie sheet approx. 2" apart since they will spread out while cooking.
  5. Cook at 350F for 12 min or until the edges look brown. They will harden more as they cool!
  6. Enjoy these fresh out of the oven or store them in an airtight container for a couple weeks (as if they won't be eaten by then- ha!).

You may be tempted to try the batter... don't. It actually tasted quite awful! But I swear to you it tastes amazing once cooked- just trust me!!
