I asked you guys if you wanted me to share this recipe on  my blog despite it not being the most “nutritious” and you said YES so here you go!

These are not a nutritionally dense muffin so if that’s what you’re looking for, keep looking. haha These are definitely more an indulgent, impress your friends muffin that no one will be able to resist! The lemon adds amazing flavor so don’t skip it! I mean, you can… but don’t.

I liiiive for these muffins. Ah, they are so good! They are definitely best fresh out of the oven so serve them up for brunch! I swear they melt in your mouth. That said, they do store fine for a few days are still delicious! You can also use applesauce instead of oil but you will get a more dense muffin. Still good, but not life changing.

Lemon Berry Muffins
These muffins MELT IN YO MOUTH. They are SO delicious! No they are not particularly nutritious but if you want a treat, make these!

Instructions
  1. Preheat oven to 375F.
  2. In a small bowl, mix together the non dairy milk and apple cider vinegar. Let it sit while you mix your dry ingredients. It will curdle, like buttermilk!
  3. In a large bowl, mix together your dry ingredients.
  4. Add the non dairy milk mixture, oil and lemon zest. Mix together.
  5. Fold in your berries, gently.
  6. Spoon the batter into 24 muffin cups, filling each about half way.
  7. Bake for approx 23 minutes then let cool in the pan.
  8. Store in the fridge for up to 3 days but they really do taste best when fresh!
