I could probably write a very long love letter to vegan ice cream; I love it so much. hehe I’m so happy that vegan ice cream is becoming easier and easier to find in stores (and not quite so expensive)! It’s also really fun to make though. My kids love it too!

So today I’m sharing an amaaazing chocolate ice cream recipe.

Yep, this ice cream contains AVOCADOS but really it just tastes like chocolate so don’t be scared! It’s a great way to add in extra nutrients. Avocados are full of omega 3 fats which are so so vital to our health (and our kids’ health!).

I do recommend getting an ice cream maker. I have this one. I may only use it 10 times a year but it’s still so worth it! All you really need is coconut milk and a few other ingredients and you’re good! Delicious, inexpensive vegan ice cream. Of course you can make dairy ice cream too!

Chocolate Avocado Ice Cream

Instructions
  1. Add all ingredients to a high powered blender and blend until smooth.
  2. Pour the mixture into your frozen ice cream bowl and church for about 15min or until it looks like soft serve ice cream.
  3. Eat as is or transfer to a freezer-friendly dish (I like glass Pyrex) and freeze for 1-2 hours. Then you'll be able to scoop it like regular ice cream!
