Ah, so excited to share this recipe with you guys!! It’s seriously a new favourite of mine (and my husband’s and my son’s!).
Fist of all, I love to bake and cookies are for sure a favourite! I grew up baking with my mom and sisters so there’s something SO comforting about it to me! Of course, as a health-conscious person I can’t be eating sugary cookies all day every day but a treat now and then? Absolutely! I believe the best “diet” always leaves room for treats. Sometimes I’ll crave a more traditional cookie but I also love to have fun experimenting with ingredients. These cookies are the best of both because the ingredients are “different” but it still tastes pretty traditional.
What I love about this particular chocolate chip cookie recipe is all of the nutrients that are snuck in! They TASTE like more traditional chocolate chip cookies but surprise, they are vegan and gluten free! They are higher in fiber, protein and iron thank to the chickpea flour and lower in sugar thanks to the molasses, maple syrup and sugar free chocolate chips.
