I could probably write a very long love letter to vegan ice cream; I love it so much. hehe I’m so happy that vegan ice cream is becoming easier and easier to find in stores (and not quite so expensive)! It’s also really fun to make though. My kids love it too!

It has been a while since I shared a recipe here! Beckett and I love to bake together and cookies are always a favourite. Oddly, he really prefers the dough over the actual cookie… but hey, more cookies for me!  This particular recipe is great because it’s packed with bonus nutrients (and you can easily make it gluten free!).
